Juan Mora

Full Professor of Analytical Chemistry at the University of Alacant (UA). He directs the Expert Course in Artisan Ice Cream Production, a UA title with the collaboration of the National Association of Artisan Ice Cream Makers (ANHCEA). His research activity focuses on the development of analytical methods applied to bioanalysis and food analysis.


Artisan ice cream production is the result of the balanced contribution of many fields of science and requires in-depth knowledge in food science, mathematics, chemistry, physics, or nutrition.
